Instructions

Step 1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.

Step 2. Mash bananas in a large bowl until mostly smooth.

Step 3. Stir in melted butter, sour cream, sugar, egg, and vanilla.

Step 4. Sprinkle over baking soda and salt, stir to combine.

Step 5. Add flour and fold in gently until just combined (don’t overmix).

Step 6. Scoop into muffin tin (about ¾ full).

Step 7. Bake 18–20 minutes, until a toothpick comes out clean.

Step 8. Cool slightly and enjoy warm with butter.

8 oz (225 g) cream cheese, softened

½ cup (1 stick) butter, softened

3–4 cups powdered sugar

Instructions: Beat cream cheese and butter until smooth. Add powdered sugar gradually, then vanilla. Whip until fluffy. Spread or pipe onto cooled muffins.

Whipped Peanut Butter Frosting

½ cup creamy peanut butter

¼ cup butter, softened

1 cup powdered sugar

2–3 tablespoons milk

Instructions: Beat peanut butter and butter together. Add powdered sugar, then milk until spreadable. Light, sweet, and kid-approved.

Simple Vanilla Glaze

1 cup powdered sugar

2 tablespoons milk (or cream)

½ teaspoon vanilla extract

Instructions: Whisk until smooth. Drizzle over muffins — it sets into a shiny glaze.
