Step 1. Bake the homemade fries
- Preheat oven to 425°F (220°C).
- Toss fries with 1 tbsp olive oil, salt, pepper.
- Spread on a baking sheet, skin-side down if possible. Roast 35–40 minutes, flipping halfway, until golden brown and crisp with roasted edges.
Step 2. Cook the carrots
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Add diced carrots, season with salt and pepper, and sauté 8–10 minutes until tender. Remove and set aside.
Step 3. Sear the rib steaks
- In the same skillet, increase heat to medium-high.
- Add cubed rib steaks in batches if needed (don’t crowd the pan).
- Sear 2–3 minutes per side until browned but still juicy inside. Remove and set aside.
Step 4. Make garlic-bacon butter
- Lower heat to medium. Add butter to the skillet.
- Stir in minced garlic and bacon pieces, cooking about 1 minute until fragrant.
Step 5. Blister tomatoes & combine
- Add cherry tomatoes to the skillet and cook 2–3 minutes until blistered.
- Return steak and carrots, tossing everything in the garlic-bacon butter and tomato juices until coated.
Step 6. Assemble the loaded fries
- Place the fries on a plate.
- Spoon the rib steak, bacon, and carrots and cherry tomatoes, generously over the fries.
- Garnish with parsley or thyme. Serve hot!
