For the Batter:
1 cup starter (or substitute with 1/2 cup sour cream and 1/2 cup Greek yogurt)
1 cup all-purpose flour
3/4 cup sugar
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/3 cup oil (vegetable or canola)
1 egg
For the Topping:
2 tablespoons all-purpose flour
1/3 cup brown sugar
1 tablespoon butter, softened
1/2 teaspoon ground cinnamon
Instructions
Prepare the Batter: In a large mixing bowl, combine the starter (or sour cream and Greek yogurt), flour, sugar, baking soda, salt, cinnamon, oil, and egg. Mix until the batter is smooth and well combined.
Prepare the Topping: In a separate bowl, mix the flour, brown sugar, butter, and cinnamon until crumbly.
Assemble the Cake: Preheat your oven to 350°F (175°C). Grease a baking pan (8x8-inch works well). Pour the batter into the prepared pan and spread it evenly. Sprinkle the topping mixture over the batter.
Bake: Place the pan in the oven and bake for 20–30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Let the cake cool slightly before serving. Enjoy as a delightful treat with coffee or tea!
