Ciorba de Perisoare - Meatball Soup

DIRECTIONS FOR MEATBALLS

Add ingredients to a large bowl. Mix meats together. Add the oats, egg, and salt and pepper. Mix well together and form into meatballs.

DIRECTIONS FOR SOUP

Step 1. Chop all the vegetables and place them into a large pot. Sauté over medium heat for about 3 minutes (no oil is needed), just until the vegetables begin to release their natural juices and aromas.

Step 2. Add enough water to cover the vegetables and bring to a boil. This creates the base of the broth.

Step 3. Once the water is boiling, gently drop in the meatballs. Lower the heat to medium-low and cook for 25–35 minutes, until the meatballs are fully cooked and the vegetables are tender.

Step 4. Season the soup with salt and pepper to taste.

Step 5. Stir in 1 cup of sour cream and a handful of freshly chopped Italian parsley. Allow the soup to boil for an additional 2–3 minutes after adding the sour cream — this step prevents the soup from tasting overly sour.

Step 6. Remove from heat and serve hot. Garnish each bowl with a little extra parsley for freshness, if desired.
