Ciorba de Perisoare - Meatball Soup

DIRECTIONS FOR MEATBALLS

Add ingredients to a large bowl. Mix meats together. Add the oats, egg, and salt and pepper. Mix well together and form into meatballs.

DIRECTIONS FOR SOUP

Chop all vegetables and add to a large pot. Saute on medium heat for three minutes (no oil needed). Add the water and boil the vegetables. When water is boiling, add the meatballs and cook for 25-35 minutes on medium-low. Season with salt and pepper. Garnish with chopped Italian parsley and 1 cup of sour cream. After adding the sour cream, boil the soup for another 2 to 3 minutes. (Omitting this step will make the soup sour.)
