Ciorbă (Zama) de Varză: A Classic Romanian Cabbage Soup

A traditional, light, and refreshing dish I grew up with, great for summer and weight loss, but great anytime of the year.

If using cooked pork, 45 minutes

Instructions

Step 1: In a large pot, cook the meat of your choice until it breaks down and becomes tender. This could take an hour or more, depending on the cut.

Step 2: While the meat is cooking, chop all the vegetables.

Step 3: Add the chopped vegetables and cabbage to a separate pot. Sprinkle some salt over the cabbage to help it cook down faster.

Step 4: Mix the vegetables together until they sweat, the cabbage wilts, and a fragrant aroma develops.

Step 5: Cut the cooked meat into chunks and add it to the pot with the vegetables.

Step 6: Fill the pot with water and continue cooking until the cabbage is fully tender.

Step 7: Stir in a can of tomato sauce, then season the dish with additional salt and pepper to taste.

Step 8: Garnish with fresh dill before serving.
