Instructions

  1. Sauté the Onions:
    Heat 4 tablespoons of oil in a large skillet or pot over medium heat. Add the chopped onions and sauté until soft and translucent, about 5–7 minutes.
  2. Add Paprika and Chicken:
    Stir in the paprika, mixing well with the onions. Add the chopped rotisserie chicken to the skillet and mix until the chicken is evenly coated with the paprika-onion mixture.
  3. Incorporate Sour Cream and Broth:
    Lower the heat to medium-low. Stir in 1 cup of sour cream, ensuring it blends smoothly. Gradually add the chicken broth, starting with 2 cups and adjusting to achieve your preferred consistency.
  4. Season to Taste:
    Add salt and pepper to taste, stirring well. Let the mixture simmer for 5–10 minutes to allow the flavors to meld together.
  5. Serve:
    Remove from heat and serve warm. This dish pairs perfectly with rice, noodles, or crusty bread!
