Delicious Roasted Red Peppers and Dressing

DIRECTIONS

ROASTING THE PEPPERS

Place peppers on cookie sheet and bake them at 375 degrees, turning them on all sides until you see the skin bubble and getting dark. The process can take approximately 45 minutes depending on the size of the peppers. The larger they are, the longer it will take. Do not overbake as there won't be much pepper left!

Once roasted, remove from oven and let them cool. Peel and place them in a bowl. They will release some juice which can be discarded.

DRESSING

Mix well and pour over the roasted red peppers. Serve immediately or refrigerate for a few days to let the flavors deepen. The longer it marinates, the more flavorful the peppers will be. Serve with chicken and mashed potatoes or on a sandwich. Enjoy!
