Step 1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Reserve a small cup of pasta water, then drain well.
Step 2. While the pasta cooks, cut the bacon into small pieces and brown in a skillet over medium heat until crispy. Remove from the heat and set aside, reserving 2–3 tablespoons of the rendered bacon grease.
Step 3. Crumble the feta cheese into small chunks so it’s ready to mix evenly into the pasta.
Step 4. Place the hot drained pasta into a large serving bowl. Add the bacon pieces and spoon a couple of tablespoons of bacon grease over the pasta for flavor. Sprinkle in the crumbled feta.
Step 5. Toss everything together until the pasta is coated, the cheese begins to soften slightly, and the bacon is well distributed. Adjust seasoning with black pepper (salt only if needed). Serve warm.
