Step 1. Remove the skin and the fat from the chicken thighs. Cut in half or in thirds for smaller pieces, leaving the bone in for the flavor.
Step 2. Chop the onion and the green pepper.
Step 3. Place the chicken, onion, green pepper in the pan on medium heat. Saute, stirring slowly for approximately 20 minutes. Add salt and pepper and continue cooking until the chicken is cooked. Add the garlic. Remove from heat.
Step 4. Add 4 cups of water and 1/2 tablespoons of salt to a saucepan and start boiling. Before it reaches the boiling point, whisk the polenta in the water turning the heat to medium low. Cook for 2 minutes. Remove from heat.
Step 5. Place polenta on plate; add chicken stew. Top with a dollop of sour cream if desired. Enjoy!
