Peach Freezer Jam

Preserving peaches is easy and fast especially if you use the freezer method. We do it each year and enjoy the jam in a variety of ways.

Instructions

Step 1. Boil water in a large pot. Prepare cold bath by adding ice and water to a large bowl.

Step 2. Drop peaches in the water for 10-20 seconds or until the skin splits.

Step 3. Using a slotted spoon, remove peaches and place in cold water. Peel off skins by using a pairing knife. Place peaches in a large bowl.

Step 4. Slice and crush the peaches (or run through a food processor); add lemon juice.

Step 5. Measure peach amount and place in a bowl. Add sugar and pectin and mix well. Add to jars or containers, cover, and place in the freezer.

Note: I use these exact amounts with other types of fruit such as strawberries, raspberries, apricots, etc. The jam turns out good every time.
